This frozen strawberry pie is so easy to make and delicious on a summer afternoon.

1 (3 ounce) package strawberry flavored gelatin

1 1 / 2 cups boiling water

2 cups fresh strawberries, sliced

2 cups vanilla ice cream, slightly thawed

1 1 / 4 cups water boiling

1 (9 inch) ready-made graham cracker crust

Getting There

Dissolve gelatin in boiling water. Gradually add cream and vanilla. Stir until the ice has melted. Pour into freezer and chill just until thickened but not firm (about 25 minutes).

Double Strawberry ice cream to the mix. Pour into the prepared pie crust. Chill up to 3 hours or until firm. Garnish with whipped cream and nuts.

In a bowl, mix bread crumbs and ginger 1 tablespoon sugar, mix well. Add the melted butter. Press mixture into an ovenproof 9-inch cake. Bake the crust for 15 minutes. Cool. Place the crust in the freezer for 1 hour so it's nice and firm. Take the tart shell from freezer and make the pie filling.

Pie Filling

In a bowl medium, mix pumpkin, remaining sugar, salt, ginger, cinnamon and nutmeg. Mix well. Add the whipped cream.

Spread the softened vanilla ice cream at the bottom of pie crust. Pour the pumpkin pie on top of ice cream. Freeze cake for up to 2 hours until firm. Garnish with cream whipped and gingersnaps.
